1 smashed ripe banana
½ teaspoon ground cinnamon
2 cups rolled oats
½ cup desiccated coconut or ground almonds
½ cup raisins, apricots, dried blueberries or good quality dark chocolate chips
¼ cup maple syrup or honey
¼ cup vegetable oil or soft butter
Preheat your oven to 130 C
Combine all the ingredients into a large bowl.
Mix in a food processor until the mixture binds
Roll the mixture into small balls and flatten with a fork to form cookies, depending on how large you make them, the mixture should form about 15 cookies.
Bake in a moderately low oven for 30 – 35 minutes or until golden and set on the outside.
Cool and enjoy.
Tips & Tricks
Pump up the protein with a couple of scoops of protein powder for the adults.
Shape into rectangles for healthy, homemade muesli bars.
